A couple who perfected their recipe for New York-style bagels and sold them at the farmer’s market and online, is hoping to open a new trailer with additional products soon.
Allie and Dominic Portillo founded Dough & Grinds Bagel Co. in Ocala this past April.
The new business sells bagels and coffee for porch pickup or delivery, with plans to open a trailer by next month, according to Mrs. Portillo. The bagels are all individually hand-rolled, boiled, and baked fresh every morning.
“Growing up, it was a staple for us to get a bag of bagels on the weekends to bring the family together,” said Portillo in an email to Ocala-News.com. She says she missed the bagels she grew up with and decided to dedicate time to creating her own recipe.
“I studied night and day about bagels and created recipe after recipe until I came up with the one we loved and are proud to serve our community,” said Portillo.
Portillo says she has dreamed of owning her own coffee trailer/shop and that it is “surreal” to be on the precipice of achieving that goal.
In addition to bagels, Portillo says that when the trailer opens, the business will expand its menu to include cream cheese, lox, espresso drinks, and drip coffee.
The business is available for online orders seven days a week at Dough & Grinds Bagel Co. It also regularly makes appearances on Saturdays from 9 a.m. to 2 p.m. at the Ocala Downtown Market (403 SE Osceola Avenue).
